Working from home gives you a great opportunity to eat well! Today it's all about warming up, it's cold! - Try a filling vegetable soup!
This recipe makes about 4 portions
850ml vegetable stock, made from stock cubes
1 can of tomatoes, chopped
1 can chickpeas
1 onion, chopped
140g red lentils
generous pinch of chilli flakes or ground pepper
1 tbsp of olive oil
4 tbsp of yoghurt, to serve (optional)
Heat a large saucepan, add onion and oil and let it soften for 5 min. Stir in the lentils, tomatoes and stock, bring to the boil and then simmer for about 15 min.
Blend the soup briefly and then add the chickpeas. Heat gently, add yoghurt and serve
