Do you miss your favourite wrap at lunch time? I'd bet this one is much nicer! Only a handful of ingredients, filling and good for you!
Makes 2-3 portions of bean mix
(keep the bean mixture in a tub in the fridge for tomorrow!)
1 tin of black beans, drained
1 small banana, chopped
1 tsp of dried mixed herbs (any you like)
Turmeric, garam masala, curry powder to taste
1 onion, chopped
2 garlic cloves, minced
100g grated cheese
A handful of watercress, spinach or lettuce
Salt and pepper to taste
1 wholegrain wraps
Heat some oil in a frying pan, add onions and garlic.
Add the banana, herbs and spices and saute for 5 minutes
Add the beans and warm them up.
Warm up your wrap briefly in the microwave or in the oven.
Add the fresh greens, two spoonful of your bean mix, a handful of grated cheese, roll them up and enjoy!
