This is a delicious recipe, inspired by Nigel Slater – I just made it a little bit healthier on my quest to add more fibre to your diet! Did you know that fibre can reduce your risk of developing heart disease? It also can balance your cholesterol levels.
Ingredients for 2 portions:
Use a non-stick frying pan and heat the oil or butter gently. Add the fish to the pan (you may cook only two at a time to give them enough room in your frying pan). Depending on the thickness of your fish, you may want to turn them after 4-6 minutes.
The crumbs will turn golden and the flesh is white, it should be firm to the touch.
Keep the first two fillets warm and cook the other two. Serve with green leafy veg like spinach or chard. Enjoy!
