Healthy Fruit Crumble

Who doesn’t love a crumble? Here’s the ultimate healthy version! Use any fruit you like: apples, berries, rhubarb, plums – it’s super yummy, you will love it!

This recipe makes about 6 portions
 
250g fresh apples (use a combination of eating or cooking apples) or any other fruit you would like to use, like berries or plums etc
1 tbsp of maple syrup or rice malt syrup (if you use sweet fruit, you may not need it)
 
8 tbsp of rolled oats (the big ones, use gluten-free if required)
4tbsp of wholegrain spelt flour (or any whole grain flour of choice, gluten-free if needed)
pinch of salt
½ tsp vanilla essence or ground vanilla
4 tbsp maple syrup 
3 tbsp of coconut oil, melted
 
 
Preheat the oven to 190C
Place 6 ramekins on a baking tray
First, prepare the fruit. If you use fresh or frozen fruit, stew them for a few minutes with the maple syrup. If you use stewed fruit simply add the maple syrup. Spoon the mixture into the ramekins, so they are about 2/3 full.
 
Mix the oats, flour, and salt, add vanilla, maple syrup, and coconut oil and mix with a fork. It should resemble a loose crumbly dough.
 
Place it evenly in the ramekins on top of the fruit mixture, pile it up a bit so the top gets nice and brown 🙂
 
Bake for 20 min. They taste best when they are warm with a bit of natural yoghurt!
